Chimay Spéciale Cent Cinquante

This year marks the 150th anniversary of “Bières de Chimay”- the Trappist brewery known around the world for its extraordinary Belgian ales. In honor of this tremendous milestone, the brewery has released a special anniversary ale packaged in a beautiful collectors-edition screen-printed 750ml bottle. Spéciale Cent Cinquante (“150″ in French) is a 10% abv strong golden ale with a beautiful pale golden hue, a frothy white head and an effervescent, champagne-like character. Brimming with fresh hops and yeast on the nose, Cent Cinquante is full-bodied and incredibly complex on the palate with a lingering bitter finish. This is Chimay’s first new release in over forty-six years and only the fourth style to be sold commercially. Only 2500 cases made it to the United States and because we acted fast, we were able to score 500 of them for the New Jersey market! About Chimay

The Chimay brewery is located within the Notre-Dame de Scourmont Abbey in the village of Chimay, Belgium and is solely maintained and operated by Cistercian Trappist monks. While the monastery dates back to 1850, the brewery came into in existence in 1862 as a means to providing financial support to the monastery and their surrounding community. This practice of charitable giving is still upheld to this day, as is the superior level of excellence with which the Chimay ales are produced.

What is Trappist Beer?
The definition of a Trappist beer is one that is “brewed within the walls of a Trappist monastery under the control and responsibility of the community of monks, and whose revenue is devoted to social service.” There are approximately 174 Trappist monasteries around the world today, but only eight of them produce Trappist beer. In addition to Chimay, they are Achel, Westvleteren, Orval, Rochefort, Westmalle, La Trappe (Koningshoeven) and most recently Stift Engelszell. All are located in Belgium with the exception of La Trappe which is in the Netherlands and Stift Engelszell of Austria. Chimay was the first to use the Authentic Trappist Product logo on their bottles – a designation achieved by adhering to the strict guidelines set forth by The International Trappist Association and the monasteries of the Order of Cistercians of the Strict Observance.

The Beers of Chimay
The first ale to be brewed at the abbey in 1862 was the Chimay Red. After World War II, the recipe was altered a bit, but still reflects the ale’s original quality and namesake. The Chimay Blue made its debut in 1948 as the monastery’s first Christmas beer and later became a regular item. The youngest of the abbey ales is the Chimay Tripel which was bottled for the first time in 1966. In 2001, the Tripel was made available on draft and remains the only ale exported in keg format. Approximately half of all Chimay produced is exported to countries around the world. A fourth Chimay, the black label, is not distributed and is only made for the consumption of the monks and their guests. All three Chimay ales undergo a re-fermentation in the bottle and none are filtered or pasteurized. Chimay ales are all extremely ageable, in particular the Blue which can age up to fifteen years or more! Drink now or enjoy in years to come!

Chimay Premiere – Red
This Abbey Dubbel boasts a beautiful copper color and a rich creamy head. Delicate and fruity on both the nose and the palate with strong hints of apricot. Extremely silky with a slightly bitter finish. 7% abv 99 points

Chimay Grand Reserve – Blue
Deep mahoghany in color with a light brown head, this Belgian Strong Ale has an extremely fragrant aroma of caramel, fresh yeast and flowers. Very complex and nicely balanced on the palate with a good bitterness and strong notes of roasted malt.

Chimay Tripel – White
This Belgian Tripel is golden in color with a slightly hazy appearance from the addition of fresh yeast. On the nose you’ll get a strong aroma of fresh hops, yeast, Muscat and raisins. Full-bodied and complex on the palate with notes of fruit, spice, raisins, yeast and just the perfect amount of bitterness in the finish. 8% abv 99 points

Chimay Cheese!

In addition to brewing beer, the monastery has been making several types of cheese since 1876. Dedicated to living sustainably as possible, the monks feed the cows spent grain from the beer mash and then use their milk to produce the cheese! If you haven’t seen Chimay cheese in the store, keep an eye out for it as there is at least one style that is exported to the US.
